My big break came one day, fresh out of the Swiss Culinary Academy while visiting in Southern France. I had a chance encounter with a man at a traditional bakery in Provence, which had run out of bread. I told him not to worry and it would be as easy to bake his own loaf. I taught him, unaware he was France's Culture Minister Jacques Lange! Soon after that he offered me to cook at the Palais Royal in Paris!
This started an exciting and fascinating culinary journey; I have cooked for kings, politicians, international celebrities and the who's who of Hollywood's elite! My passion let me travel all over Europe, Asia and the United States cooking for the rich and famous equally as cooking in unassuming homes, learning tricks from local people, eating a simple but humbling dinner and sharing my best culinary experiences in the expressed joy of others.
My upbringing as Buddhist early on familiarized me with a deep-rooted respect for the five elements and the powers that nature offers us. I soon focused on fusing healthy elements into traditional cuisine establishing my signature. I refined my knowledge in Singapore, after being invited by Asia's most respected Traditional Chinese Medicine (TCM) research Pharmacy, Eu Yan Sang, to participate in training and in the successful development of a world's first herb-fusion French restaurant. My Sous chef Chris hooked me on Molecular Gastronomy, a fantastic way of presenting our oldest wisdom with a modern twist. Thank you!
As a chef, I have every power to make a difference and if people measure me by the food that I put on their table, I end up being a good person - and that's important to me! Within little changes, everyone can boost their immune system; old or young can guarantee health and longevity. It's my joy to disclose this old wisdom available to all of us.
My love for the Orient and TCM cooking invites me to work as chef and trainer in the world's most prestigious spa hotels and resorts from Bali to Europe. It is a blessing to share with other chefs, hobby gourmands, foodies and all curious people my philosophy: I present solutions when in search for alternative clarification. We can enhance our quality of life, in a polluted world. Although a Buddhist, being intelligent and multi-talented it would be unfair and against my principles to negate myself. I have just completed a television pilot (link).
